Smokey Black Beans

Smokey Black Beans
Smokey Black Beans by nikibakes_uk_

For this recipe, I’m using high-quality canned whole peeled tomatoes from Europe and Italy to create a rich, smoky sauce for these comforting Mexican-inspired black beans. This smoky black beans dish is bold, hearty, and full of flavour. The tomatoes cook down with garlic, onion, spices, and black beans to create a rich sauce that is perfect served with rice, tortillas, or avocado.

Ingredients

  • 400g (1 can) whole peeled tomatoes
  • 800g (2 cans) black beans, drained
  • 1 onion, finely chopped

  • 1 tbsp oil
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp dried oregano

  • 1 tsp chipotle paste
  • salt and black pepper, to taste
  • juice of 1 lime
  • fresh coriander, to garnish

Rice, tortillas, or avocado, to serve

Heat the oil in a large pan and cook the onion for 5–6 minutes until softened.

Step 2

Stir in the garlic, red chilli, smoked paprika, cumin, oregano, tomato purée, and chipotle paste and cook for 1 minute.

Step 3

Pour in canned whole peeled tomatoes and break them up gently with a spoon.

Step 4

Add the black beans, salt, and black pepper.

Step 5

Simmer for 15–20 minutes until thickened and rich.
