Spaghetti Muffins by squashedpickle

These spaghetti muffins are the best lunch box snack! Perfect for picnics or parties they are fun and super easy to make. You will need a muffin tray and paper liners/cups.

Ingredients

200g spaghetti

2 large eggs

250 ml spinach marinara sauce (2 tbsp olive oil, a clove of garlic, a few leaves of basil, 250g tinned tomatoes, 150g spinach or to taste)

a handful grated cheese

salt and pepper to taste

Directions

Step 1

To make these muffins you first need to boil the pasta al dente and drain.

Step 2

Make the spinach marinara sauce: sauté the garlic in olive oil, add the tinned tomatoes (if using whole peeled tomatoes crush them with a fork) and basil and cook gently for 20 minutes, then add the spinach and finish cooking until it is wilted; you can make your favourite pasta sauce using the tinned tomatoes and adding any veg you wish. (You can also add tuna, cooked meat or chicken etc)

Step 3

Mix the cooked pasta (roughly chopped), marinara sauce, eggs and grated cheese in a pan, line the muffin tin with paper cups and fill with the mixture! When full top with more egg and sprinkle with cheese. Bake in a an-assisted oven at 160°C for 15 mins until they fluff up and resemble a muffin!

These can be a snacktivity with older kids and a great way to teach basic kitchen techniques. Let them chop up the spaghetti and experiment with different sauces, create their own muffins and enjoy!
