Tuna Macaroni Muffins

Tuna Macaroni muffins by squashedpickle

This is a super easy, budget friendly recipe that all the family can enjoy. I like to make little muffins for Zac and they make the best after school snack, lunch box filler, lunch or dinner! With a hand full of ingredients this can be done very quickly and trust me they are delicious! My recipe makes 24 muffins. I usually make 12 with chilli and 12 without because I like heat!

Ingredients

  • For the tuna pasta sauce

    200g canned chopped tomatoes

    1 tbsp crushed garlic

    1 tin (145g) of tuna

    a handful of spinach, chopped

    parsley, chopped to taste

    salt and pepper, to taste

    200g macaroni

    100g grated cheddar cheese

    3 eggs (whisked)

Directions

Step 1

Cook the macaroni according to package directions and set aside. Make the tuna pasta sauce by sautéing the garlic and tuna in the canned tuna oil. Add the chopped parsley, spinach and tomatoes and cook gently for about 10 minutes. Season and mix into the cooked macaroni. Add half the grated cheese and mix. Add in the eggs and mix.

Step 2

Spoon 1 tablespoon of Tuna macaroni into each mini muffin tin cup and sprinkle with cheese. Bake in a preheated oven on 180c for 15mins until the muffins are golden and cheese has melted.

Step 3

You can also enjoy this in a bowl without baking - it’s such a yummy pasta - just don’t add the eggs.
