This is a Middle Eastern fragrant and spicy hot sauce, brought to Israel by Yemenite Jews. Serve it as part of an array of appetisers and sharing plates to perk up a brunch or to accompany grilled meats.

Ingredients

  • 5 cloves of garlic, chopped
  • 4-6 or so medium hot chilies such as jalapeno
  • 400g canned chopped tomatoes, including their juices
  • 1 tbsp cumin
  • 1 tsp garam masala, or a Yemenite spice mix
  • ¼  tsp turmeric
  • seeds of 5-6 cardamom pods
  • 25g parsley, chopped
  • 25g coriander leaves, chopped
  • 25g mint leaves, chopped (optional)
  • juice of ½ lemon
  • 1½ – 2 tbsp olive oil
  • salt

Directions

Step 1

Crush the garlic with the salt, using either a mortar and pestle or a blender.

Step 2

Combine with chilies, tomatoes, and spices, and blend or crush until it forms a thick liquid.

Step 3

Add the parsley and coriander (and mint, if using). Blend or crush together as you like until it forms a chunky puree.

Step 4

Add the lemon juice and olive oil, and adjust the seasoning.
